Curried Chicken Salad

A contribution by my twin sister Dimity, a middle school math teacher in NYC! Here is one of her favorite staples for easy brown bag lunches at school!

Ingredients

Salad
- two chicken breasts
- about 2–3 celery stalks, chopped into small pieces
- 1 heaping handful of raisins
Sauce
- 2–3 tablespoons mayo
- 1–2 tablespoons curry powder
- 2 teaspoons cumin
- 1 teaspoon nutmeg
- salt & pepper to taste
Instructions
- All to taste. If you like it with more mayo, then add more. I don’t so mine is chock full of spices!
